Anytime I hear “two ingredients”, I’m game; especially when it means I can get my toddler to eat eggs. A friend sent me this recipe and it’s been a game changer for our morning routine.
- 1 medium ripe banana
- 1 – 2 eggs
- Mash ripe banana well, add in whisk eggs.
- Warm non stick or cast iron pan to medium, spray with oil (my friend uses coconut oil to make it extra healthy, I use butter). Cook silver dollar size pancakes 30 seconds on each side and serve.
- Use a small amount of maple syrup or agave.
