Two Ingredient Pancakes

Anytime I hear “two ingredients”, I’m game; especially when it means I can get my toddler to eat eggs. A friend sent me this recipe and it’s been a game changer for our morning routine.

Ingredients:

  1. 1 medium ripe banana
  2. 1 – 2 eggs

Directions:

  1. Mash ripe banana well, add in whisk eggs.
  2. Warm non stick or cast iron pan to medium, spray with oil (my friend uses coconut oil to make it extra healthy, I use butter). Cook silver dollar size pancakes 30 seconds on each side and serve.
  3. Use a small amount of maple syrup or agave.
